Eggs stuffed with avocado and truffles - especially good-looking and appetizing

  • Stuffed eggs (Maria Mayiku / Epoch Times) Stuffed eggs

Eggs stuffed with avocado and colored with beetroot, as good-looking as they are delicious. By replacing the classic recipe mayonnaise with avocado, stuffed eggs are healthier and lighter.

The coloring of the outer part of the egg white gives the appetizer a cheerful and appetizing tone. From the remaining boiled beets, you can prepare a tasty salad that can be served with stuffed eggs or other garnishes.

Truffles bring an extra flavor that will surely impress even the most demanding guests.

ingredients

6 eggs taken directly from the refrigerator,
4 pieces of beets,
1 cup apple cider vinegar,
enough water to cover the pieces of beets,
1/2 teaspoon salt

6 hard boiled yolks,
the core of a ripe avocado,
1-2 tablespoons of lemon juice as desired,
1 teaspoon Dijon mustard,
2 tablespoons oil,
Salt and pepper to taste,
1 teaspoon of truffles,
green parsley or other greens as desired

First, prepare the solution for coloring the eggs. Peel a squash, grate it and cut it in half. Put the beets in a saucepan, then pour a cup of apple cider vinegar and half a teaspoon of salt, then add enough water to cover the pieces of beets.

Boil over medium heat until the first boil, then reduce the heat to low and continue cooking for about 15-20 minutes. After 20 minutes, the beets are removed from the bowl and the remaining solution is used to color the boiled eggs.

Meanwhile, boil the eggs. They are boiled in a saucepan, without being superimposed and water is added to cover them plus 2-3 fingers above the eggs. Add a little salt to the boiling water.

When the water starts to boil, reduce the heat to low and continue boiling for 10 minutes.

After boiling, the eggs are removed from the water and transferred to a bowl of very cold water. If you have ice cubes, you can add them to the bowl to keep the water cold. If you don't have ice, let the cold water run over the eggs until they cool.

Peel the eggs and put them in the water in which the beets boiled. The eggs are kept to color for 2-3 hours, after which they are removed and rinsed and wiped with a paper towel.

Cut the eggs in half lengthwise, then remove the yolks.

Put the yolks in a bowl and crush them with a fork. Add finely chopped onion, avocado core, lemon juice, a teaspoon of mustard.

To obtain a fine paste, use a vertical mixer or a food processor. Add the oil one at a time, until it reaches the desired consistency.

Sprinkle with salt and pepper to taste. At the end add a few slices of chopped truffles and a little green parsley or other greens as desired.

The obtained paste is transferred to a pos for decoration to which is attached a dui with wide opening. The pos can be replaced with a plastic bag, at which a corner is cut.

Place the egg white halves on a plate and fill one by one with the avocado composition.

Garnish with slices of truffles or green leaves as desired.

Finally sprinkle with pepper or paprika. The stuffed eggs are ready to be served.
