6 eggs taken directly from the refrigerator,
4 pieces of beets,
1 cup apple cider vinegar,
enough water to cover the pieces of beets,
1/2 teaspoon salt

6 hard boiled yolks,
the core of a ripe avocado,
1-2 tablespoons of lemon juice as desired,
1 teaspoon Dijon mustard,
2 tablespoons oil,

First, prepare the solution for coloring the eggs. Peel a squash, grate it and cut it in half. Put the beets in a saucepan, then pour a cup of apple cider vinegar and half a teaspoon of salt, then add enough water to cover the pieces of beets.
