I prepared the mayonnaise from 2 boiled yolks, 1 raw yolk, mustard and oil (approximately 200-250 gr of mayonnaise). I boiled the fish and drained it, then chopped it finely. I also chopped cucumbers. We mixed the ingredients together in a bowl. I served it with crackers.

There are many variants of fasting mayonnaise, with soy or almond milk, with avocado or potatoes. Today, however, I will share a simple recipe for fasting mayonnaise with aquafaba (chickpea water). When preparing a fasting recipe with chickpeas, such as spinach salad with chickpeas and cranberries, do not throw that viscous liquid out of the can. Fasting mayonnaise with aquafaba (chickpea water) is a quick and very handy option both for fasting people and for lovers of vegan recipes. All you need is a hand blender to combine a few ingredients from the pantry. It can be used with any vegetable salad and if you add a clove of crushed garlic you will get a great fasting aioli sauce, only good for fish or grilled meat.
- 4 tablespoons aquafaba
- 1 teaspoon Dijon mustard
- 1 tablespoon apple cider vinegar (or lemon juice)
- ¼ teaspoon salt
- 200 ml. sunflower oil
1 Put 4 tablespoons of aquafaba, mustard, vinegar and salt in a bowl. Mix for a few seconds, until well blended, then continue with the oil that you add in a thin thread.
2 At the end you will get a consistent fasting mayonnaise that you can use just like that or, if you want, you can turn it into aioli sauce by adding a clove of crushed garlic. It can be consumed immediately and lasts for at least a week if you keep it in the refrigerator in a sealed jar.

Gazpacho it is another recipe that I make very often in summer because it is refreshing and healthy. So far I have been making various salads, but I have not been able to show you this salad. Because I had some very nice pumpkins in the fridge, I thought I would prepare something good with them. I also really like pumpkins, so I keep using them, especially in summer.
Zucchini are healthy, and in summer we find Romanian ones that are tasty and very cheap. When I was a child, pumpkins were very often present on our table. My grandmother used to make them fried or soup, and my mother meatballs. Since then, I also really like pumpkins. Now I prepare them mainly on the grill, in the skewer or simply as such. They are very good with a little oil and a little balsamic vinegar and possibly sprinkled with mujdei. For me, it is one of the dishes of my childhood. Along with a juicy tomato salad is an excellent summer lunch.
The recipe for pumpkin salad with mayonnaise is simple and easy. I steamed the pumpkins, but you can also boil them in the classic way if you want. Steamed, they do not absorb as much water and retain more nutrients. If the pumpkins are watery, as they were mine, you must drain them. This way the salad will not be watery, and the mayonnaise will not be diluted. If I still mentioned mayonnaise, it must be the house. It is much tastier and we definitely know what we put in it. You can also replace it with yogurt or sour cream if you want a lighter option.
For flavor, I used a few cloves of garlic, but it is also very good and a small onion that you chop finely. You can also add dill or parsley for flavor. I preferred not to add anything because I prefer it that way. Before serving, you must leave the pumpkin salad with mayonnaise in the refrigerator. It's very good cold, just as it's good eggplant salad. It can be served simply on bread, with fresh vegetables. It is absolutely wonderful and I sincerely hope you try it too. Potato salad with mayonnaise
An easy-to-prepare and very delicious potato salad that I make quite often at festive meals.

Ingredients for potato salad with mayonnaise
& # 8211 10 small or 5 large potatoes
& # 8211 5 pcs pickles
& # 8211 2-3 wall hangings
& # 8211 100 gr sweet corn
& # 8211 4 tablespoons full of mayonnaise
& # 8211 salt and pepper to taste
Boil the potatoes, peel and cut into thin slices.
We also cut the cucumbers and donuts into small pieces and mix them with the potatoes.
Add the corn and season with salt and pepper to taste.
Add mayonnaise and mix the whole composition well.
Place in a bowl and garnish on top according to your preferences.
